Kerala Chicken curry

This Kerala chicken curry with coconut milk is dear to my heart. I love any gravy with a coconut milk and spices and this chicken curry uses just that . There are tons of different variations to how chicken curry is prepared in Kerala but this particular type of Kerala chicken curry is probably the most common and loved by all.

       Ingredients

  • 500gm of chicken pieces, with bone
  • 1.5 cups of sliced onions
  • 2  tsp ginger garlic paste
  • vinegar or half a lime juice
  • 1 cup of sliced tomatoes
  • 1 tbsp of minced ginger
  • 1 tbsp of minced garlic
  • ¾ tsp of chilli powder
  • 1 tsp pepper powder
  • 2 tsp coriander powder
  • ¼ tsp of turmeric powder
  • 2-3 tsp of garam masala
  • 1 cup of grated coconut milk
  • 2 tbsp of coconut pieces
  • 2 cloves
  • 1″ piece of cinnamon
  • ½ tsp of fennel seeds
  • A fistful of curry leaves
  • 4 tbsp of coconut oil

Step 1

Drain and wash the chicken under cold running water.Transfer the chicken in a vessel add ,  green chillies paste, pepper ,salt, ginger-garlic paste ,oil and vinegar or half lemon juice.Mix all ingredients together and​ keep it aside for 15 min marination.

Step 2

After the 15 min transfer the chicken to a pan or wok and add 1/2 cup water and cook in a low flame for 20 min until it leaves some stock from the chicken. Remove from the flame separate chicken and stoke in 2 different bowls .

Step 3

Heat oil in large wok or pan and add the whole spices – fennel, cloves, cinnamon then add mined ginger, garlic,green chillies and onion then saute it until onion turns brown.Once the onions turn a dark brown, add the garam masala, turmeric powder, pepper powder,coriander powder , and chilli powder and fry for a minute until we smell roasted masala aroma. Then add the chopped tomatoes and saute for another minute.

Step 4

Now gently add 1 cup of chicken stock little by little until the fried masala and onion turns to a thick paste now add  coconut milk and loosen the curry.To this now we can add chicken and cook covered on low flame for about 20 mins or the chicken pieces are cooked soft.

Step 5

Add the coconut pieces to the above mixture .If the gravy is too thick, you can add more stock or coconut milk and bring to boil.Add salt and curry leaves on top. Mix again.
